From Home Baker to Business Owner.

Fred Bread was founded by Freddie in November 2024, but the seeds were planted much earlier—during the COVID-19 lockdown. Like many others, Freddie turned to baking during the pandemic, experimenting with different bread recipes at home. Hokkaido milk bread stood out not only because it tasted great, but also because of how much his family enjoyed it. After returning to the corporate world once lockdowns eased, Freddie was eventually laid off from his job. That pivotal moment gave him the push to pursue baking full-time and turn his well-received homemade bread into a business.

Freddie’s decision to focus on Hokkaido milk bread wasn’t just based on personal preference. He realized there were very few local bakeries specializing in this particular type of bread, which opened up a unique opportunity in the market. With a proven recipe, a love for baking, and a desire to offer something special, Fred Bread officially launched with the goal of delivering soft, fresh, and health-conscious bread to customers.

Bread Beyond the Basics.

Fred Bread’s signature product is the original Hokkaido milk bread loaf, but Freddie has expanded the lineup to include five carefully curated variants. There’s the classic loaf, a black sesame-infused loaf, and three bun options: plain Hokkaido milk buns, butter and sea salt milk buns, and black sesame milk buns. While there were once more experimental varieties, customer feedback and practical considerations helped refine the menu to just these five.

This focused approach has allowed Fred Bread to perfect each product and maintain consistent quality. Customers appreciate not only the texture and taste, but also the clean ingredients used in every batch. Whether it’s for breakfast, a snack, or paired with tea or coffee, each bite of Fred Bread offers a balanced blend of softness, richness, and subtle flavor that keeps people coming back.

A Café, New Team Members, and Bigger Plans.

Fred Bread is no longer a one-person show. With the brand gaining momentum, Freddie is currently hiring staff to help meet growing demand. This expansion will allow him to offer products not just to individual customers but also to cafés, restaurants, and hotels seeking high-quality bread for their menus. It’s a strategic move that positions Fred Bread as both a retail and wholesale supplier.

In addition, Freddie is developing a small café at his current premises. Set to open soon, the café will give customers a cozy spot to sit down and enjoy freshly baked loaves and buns on the spot. With premium ingredients, a clear product focus, and a founder passionate about quality, Fred Bread is on track to become a household name in specialty bread.
